Roasted Peewee Potatoes
Compliment your next meal with this simple roast recipe, created by Chef Rich Mead.
Ingredients
3 lbspeewee potatoes, washed
salt and pepper
3 TBSolive oil

In a large pot, place potatoes with cold water and bring to a simmer. Cook until just done, about 10 minutes, drain and toss with salt.

Preheat oven to 450°F.

About 15 minutes before serving, toss the potatoes with olive oil, salt and pepper to taste, and place uncovered on a baking tray in oven. Stir occasionally until potatoes brown a bit.
