2 ounces The Ecology Center’s Guajillo Vinaigrette
1/2 bag Salanova Mix
2 ounces Giardiniera (sub any pickle)
1 ounce The Ecology Center’s Cover Crop Crunch
1 sprig Mint, picked leaves
1 sprig

Cilantro, picked leaves


Yield: 4 servings


      • Add your salanova and pickles to a suitable sized mixing bowl. Dress with the vinaigrette and toss to evenly coat.

      • Plate in a large bowl or platter and top with the cover crop crunch, squeezing with your hand to break up any large chunks.
      • Add your mint and cilantro leaves and enjoy!
