This simple cucumber salad is an incredibly easy last-minute dish to put together for any summer gathering or even just a quick lunch. 2 tbsp | black sesame seeds |
1 tbsp | tamari (soy sauce) |
1 tbsp | sesame oil |
1 tbsp | rice vinegar |
1 tbsp | minced garlic |

Using a mandolin, slice the cucumbers into thin slices (or use a sharp knife). Place them into a colander and sprinkle a good amount of salt. Leave for 15 minutes.

Rinse and pat dry. This step helps remove excess liquid from the cucumber. Toast the sesame seeds in a pan for a couple of minutes. Dress the cucumbers and top them with the sesame seeds and some chopped cilantro. Enjoy this salad as is or chilled!
