1 | Tahitian squash, peeled, seeded, and cut into 4-inch pieces |
¼ cup | olive oil |
1 Tbl | kosher salt |
¼ tsp | black pepper, ground |
3 | sprigs of thyme |
Preheat the oven to 375°F. In a large bowl, toss the squash with the olive oil and thyme and season with salt and pepper. Spread the squash on a baking sheet in a single layer and cover with foil, then roast in the oven for about 40 minutes until tender and lightly browned. Serve warm.
