Thyme Roasted Tahitian Squash

Thyme Roasted Tahitian Squash served on dish.

1Tahitian squash, peeled, seeded, and cut into
4-inch pieces
¼ cupolive oil
1 Tblkosher salt
¼ tspblack pepper, ground
3sprigs of thyme

Preheat the oven to 375°F. In a large bowl, toss the squash with the olive oil and thyme and season with salt and pepper. Spread the squash on a baking sheet in a single layer and cover with foil, then roast in the oven for about 40 minutes until tender and lightly browned. Serve warm.
