Roasted Potatoes

Quick, easy and delicious, these Roasted New Potatoes with bay leaves and thyme make a great alternative to traditional mashed potatoes. Pairs well with a classic roast turkey as one of the star trimmings.
Ingredients
1 lbnew potatoes (such as fingerling or satina yellow) or enough for a single layer
2bay leaves
1small handfull of thyme sprigs
salt
olive oil

Preheat oven to 450 degrees. Rinse your potatoes to remove any dirt. Toss with olive oil and generous salt and place in a baking dish with bay leaves and thyme. Add a splash of water to the bottom of the dish, about ⅛”. Cover the dish with tinfoil and run your hand around the rim with a towel to ensure a tight seal – this will ensure that the potatoes steam. Check the potatoes after about 25 minutes. Once the potatoes are tender to the center (check with a fork or paring knife), they are done. If they begin to split, they are past done!
